Barbecue Coffee Pork Medallions with White Cheddar Grits

Brian Leigh

For the Finale of The Great American Recipe, I decided on a coffee-cocoa rubbed pork tenderloin served up on a bed of jalapeno cheddar grits slathered with the combination of a red-eye style pan reduction and my Somethin' Somethin' Sauce, a sweet and savory Kansas City style barbecue sauce. I finished it with a Hungarian style quick pickle for that bright, spiciness to cut through the heaviness of the dish.

Balsamic Berry Walnut Cobbler with Bourbon Cream

Brian Leigh

This cobbler is a simple recipe that harkens back to the kitchen of my Aunt Fred from the hills of West Virginia. I straight up Brian-ified this recipe by adding a few of my favorite flavors and took it from the hollers of West Virginia to the Bluegrass State with some bourbon whipped cream.

Spicy Dill Shrimp Salad in Phyllo Cups

Brian Leigh

The shrimp dip starts off sweet and creamy with a heavy hit of dill and ends in a slight fruity burn from those birdseye chiles. This dip gets absolutely demolished in our house during the holidays. My wife and I have learned to make double or even triple the recipe to ensure that we have some for that nibble with the night cap.

Romesco Style Meatballs Subs

Brian Leigh

This meatball sub is inspired by my brothers from another mother and working in their pizza place in North Eastern Ohio! The meatballs are tender and moist, the hoagie bun is chewy and is the perfect vessel for the romesco style sauce I use to bring depth of flavor to the dish. Add a slightly sweet, bright red wine vinaigrette to bring it all together and you have the perfect makings for an afternoon nap!

West African Beef Short Ribs

Brian Leigh

This West African Beef Short Rib was inspired by my friend Kalu and his family, melding the of the flavors of Nigerian street food with a down-home, hearty meal worthy of any Sunday supper. The spicy, luscious and unctuous short rib is offset by the starchy sweetness of the rice and the bright acidity of the tomatoes.
