Easy Rotisserie Chicken Salad

There are days when we've got so many obligations that cooking seems overwhelming. These weeks call for somethin quick and delicious.
Enter the rotisserie chicken salad!
Bang for the buck, the rotisserie chicken is hard to beat. The value of time and flavor is immeasurable to us. Combine that with some crunchy, sweet, and savory flavors and we're eating well for a few days.
Good and good for you, right?

Ingredients

1 rotisserie chicken, pulled and shredded

1 cup seedless grapes, quartered

2 celery stalks, diced

1 medium apple, cored and diced

¼ cup chopped pecans

1 tbsp Somethin’ For Everything

1 cup mayonnaise, use Dukes.

1 tbsp red wine vinegar
Directions
Let the rotisserie chicken cool slightly, then using your hands or a fork, remove the meat from the bones, shredding or chopping into bite-sized pieces. Place the meat into a large bowl.
Prepare your veg and fruit - dicing the celery, quartering the grapes, and chopping the apples. If your pecans need to be chopped, do so now. Place all of this into the same bowl as the chicken.
Add mayo, vinegar, and Somethin’ For Everything to the bowl and mix thoroughly.
Taste for seasoning and add salt as needed. Keep in mind that the flavors will consolidate as it sets up in the fridge. The chicken and Somethin’ For Everything should be salty enough though, so be judicious.
Serve on a slice of hearty bread or crackers. Enjoy!
Recipe Note
If you are using the rotisserie chicken, save the skin and bones to make stock!
You can lighten this up by using yogurt instead of mayo.
