I like to meal prep and these pork and beef meatballs are agnostic enough in flavor to ride along with many culinary flavor profiles.
I know that sentence is a mouthful, but rest assured, so are these. The zucchini and the cottage cheese make these light and juicy and our salt, pepper, & garlic blend - Somethin' For Everything, gives these a major flavor punch.
Here's how we meatball~

Ingredients

1 lb ground pork

1 lb ground beef

1 eggs
-
1 medium zucchini, grated

½ cup cottage cheese
-
¼ cup panko bread crumbs

2 tbsp Somethin’ For Everything

3 green onions, chopped
Directions
Preheat oven to 400 degrees F.
In a large mixing bowl, eggs, shredded zucchini, cottage cheese, green onions, panko breadcrumbs and Somethin’ For Everything seasoning until thoroughly combined.
Add in ground pork and ground beef until incorporated - be careful not to overwork this mixture.
Form into 1 inch balls and place on a greased baking sheet.
Bake for 20 minutes or until meatballs are browned and have an internal temperature of 165 degrees F.
Recipe Note
These meatballs are great with everything! We've used them with traditional marinara, a romesco sauce and even a Lebanese inspired preserved lemon sumac garlic sauce.
