Everything Meatballs
I like to meal prep and these pork and beef meatballs are agnostic enough in flavor to ride along with many culinary flavor profiles.
I know that sentence is a mouthful, but rest assured, so are these. The zucchini and the cottage cheese make these light and juicy and our salt, pepper, & garlic blend - Somethin' For Everything, gives these a major flavor punch.

Ingredients
- 1 lb ground pork
- 1 lb ground beef
- 1 eggs
- 1 medium zucchini, grated
- ½ cup cottage cheese
- ¼ cup panko bread crumbs
- 2 tbsp Somethin’ For Everything
- 3 green onions, chopped
Directions
- Preheat oven to 400 degrees F.
- In a large mixing bowl, eggs, shredded zucchini, cottage cheese, green onions, panko breadcrumbs and Somethin’ For Everything seasoning until thoroughly combined.
- Add in ground pork and ground beef until incorporated - be careful not to overwork this mixture.
- Form into 1 inch balls and place on a greased baking sheet.
- Bake for 20 minutes or until meatballs are browned and have an internal temperature of 165 degrees F.
