Everything Meatballs

I like to meal prep and these pork and beef meatballs are agnostic enough in flavor to ride along with many culinary flavor profiles. 


I know that sentence is a mouthful, but rest assured, so are these.  The zucchini and the cottage cheese make these light and juicy and our salt, pepper, & garlic blend - Somethin' For Everything, gives these a major flavor punch.


Here's how we meatball~

Ingredients

  • 1 lb ground pork
  • 1 lb ground beef
  • 1 eggs
  • 1 medium zucchini, grated
  • ½ cup cottage cheese
  • ¼ cup panko bread crumbs
  • 2 tbsp Somethin’ For Everything
  • 3 green onions, chopped

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large mixing bowl, eggs, shredded zucchini, cottage cheese, green onions, panko breadcrumbs and Somethin’ For Everything seasoning until thoroughly combined.
  3. Add in ground pork and ground beef until incorporated - be careful not to overwork this mixture.
  4. Form into 1 inch balls and place on a greased baking sheet.
  5. Bake for 20 minutes or until meatballs are browned and have an internal temperature of 165 degrees F.
