Herb Roasted Potatoes

Ingredients
- 2 lbs young potatoes, red or yukon
- ¼ cup olive oil
- 1 tbsp Somethin’ To Cluck About
- salt to taste
Directions
- Place heavy bottomed baking sheet or pan in a 450 degree oven to come to temperature. The use of cast iron is strongly encouraged here.
- Rinse potatoes and slice into halves or quarters. You want the potatoes to be approximately the same size.
- Add potatoes to bowl and generously coat with olive oil, tossing to combine.
- Sprinkle Somethin’ To Cluck About and salt over the potatoes, tossing to combine.
- Pour potatoes onto the hot baking sheet and return to the oven.
- Cook at 450 degrees for about 45 minutes, or until the potatoes are fork tender and nicely crisped.
- Serve hot and enjoy!
