This recipe is a quick and easy side dish for any family meal! Enjoy!

Ingredients

2 lbs young potatoes, red or yukon

¼ cup olive oil

1 tbsp Somethin’ To Cluck About

salt to taste
Directions
Place heavy bottomed baking sheet or pan in a 450 degree oven to come to temperature. The use of cast iron is strongly encouraged here.
Rinse potatoes and slice into halves or quarters. You want the potatoes to be approximately the same size.
Add potatoes to bowl and generously coat with olive oil, tossing to combine.
Sprinkle Somethin’ To Cluck About and salt over the potatoes, tossing to combine.
Pour potatoes onto the hot baking sheet and return to the oven.
Cook at 450 degrees for about 45 minutes, or until the potatoes are fork tender and nicely crisped.
Serve hot and enjoy!
