Ingredients
-
1 pork loin, approximately 2 lbs in weight
-
½ cup balsamic vinegar, such as Tastefully Olive’s Dark Balsamic
-
1 tbsp brown sugar
-
½ cup olive oil
-
2 tbsp Somethin’ To Cluck About
-
3 cloves garlic, minced
Directions
Place pork tenderloin in a zip lock bag and set aside.
In a bowl, combine the vinegar, brown sugar, Somethin’ To Cluck About herb blend and minced garlic.
Slowly whisk in the olive oil to create an emulsion.
Once the oil and vinegar solution are combined, pour over tenderloin and seal the bag. Place in the refrigerator for 30 minutes to marinate.
Preheat the oven to 350 degrees.
Place the pork tenderloin, along with the marinade, in a baking dish and roast, uncovered for approximately an hour or until the pork loin reaches 145 degrees internal temperature.
Be sure to baste the pork loin using the pan juices every 10 minutes or so.
Let rest for at least 10 minutes prior to serving.
