Crispy Lemon Pepper Chicken Thighs

These tender, juicy, and incredibly crispy air fried chicken thighs are loaded with flavor that only lemon, pepper, and garlic can provide.


This easy weeknight meal is gluten-free and dairy-free, making it a perfect crowd-pleaser for any occasion as well as an excellent, low effort, cheap protein option for meal prep.

Ingredients

  • 4 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Somethin' For Everything - Salt, Pepper, & Garlic Blend

Directions

  1. Preheat your air fryer to 400°F for about 5 minutes.
  2. While the air fryer is heating, pat the chicken thighs dry with paper towels to remove excess moisture. This helps them get crispy.
  3. In a large bowl, combine the olive oil, lemon juice, and Somethin' For Everything - Salt, Pepper, & Garlic Blend. Mix until well combined. Simple.
  4. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Make sure to rub the seasoning under the skin for extra flavor.
  5. Once the chicken is coated, place the thighs in a single layer in the air fryer basket, skin side up. If necessary, work in batches to avoid overcrowding.
  6. Cook the chicken thighs skin side up in the air fryer at 400°F for 25 minutes, then flip the thighs over and cook for another 15 minutes.
  7. Flip the chicken thighs over once more and cook until the internal temperature reaches 195°F and the skin is golden brown and crispy. Do not go past 210°F or the chicken will become stringy and tough.
  8. Carefully remove the chicken from the air fryer and let it rest for 5 minutes before serving. This allows the juices to redistribute for maximum flavor.
