Crispy Lemon Pepper Chicken Thighs

Ingredients
- 4 bone-in chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Somethin' For Everything - Salt, Pepper, & Garlic Blend
Directions
- Preheat your air fryer to 400°F for about 5 minutes.
- While the air fryer is heating, pat the chicken thighs dry with paper towels to remove excess moisture. This helps them get crispy.
- In a large bowl, combine the olive oil, lemon juice, and Somethin' For Everything - Salt, Pepper, & Garlic Blend. Mix until well combined. Simple.
- Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Make sure to rub the seasoning under the skin for extra flavor.
- Once the chicken is coated, place the thighs in a single layer in the air fryer basket, skin side up. If necessary, work in batches to avoid overcrowding.
- Cook the chicken thighs skin side up in the air fryer at 400°F for 25 minutes, then flip the thighs over and cook for another 15 minutes.
- Flip the chicken thighs over once more and cook until the internal temperature reaches 195°F and the skin is golden brown and crispy. Do not go past 210°F or the chicken will become stringy and tough.
- Carefully remove the chicken from the air fryer and let it rest for 5 minutes before serving. This allows the juices to redistribute for maximum flavor.
