Smoky Savory Bean Burgers

Truth bomb here - I get meated out. As such, I try to mix it up and keep our kitchen spiced with the variety of things - veggies, meats, cheeses, beans and enough nuts to drop a squirrel. Often, this leads to the classic bean burger and, what lately might be, my favorite bite.


This savory and smoky bean patty is loaded with crunchy fried onions, the umami-loaded Somethin' To Beef About spice blend and rides atop a bed of roasted red peppers. With melty muenster cheese and creamy Jalapeno Business mayonnaise slathered all over the nooks and crannies of a crunchy English muffin, you won't say no to this bean burger.

Ingredients

  • 2 16 oz cans Red Kidney Beans
  • 1 stick unsalted butter
  • 2 teaspoons Somethin' To Beef About
  • 1 english muffin, toasted and shredded
  • 1/2 cup french fried onions
  • 1 egg
  • 1/8 cup Mayonnaise
  • 1/8 cup Jalapeño Business
  • 1 tablespoon Olive Oil
  • 5 English Muffins
  • 3 slices Muenster cheese
  • 3 fire roasted red peppers, sliced
  • Some greens.

Directions

  1. In a medium pot over medium heat, add 1 stick of butter and 2 teaspoons of Somethin' To Beef About and let bloom. Approximately 30 seconds.
  2. Add the drain and rinsed the kidney beans to the skillet. Let cook, shaking the pan, for 2 minutes.
  3. Remove the beans from the heat and using a fork or potato masher, mash the beans into a paste, leaving some chunky bits for texture. Add the english muffin breadcrumbs and the french fried onions, mixing to combine. Be sure to taste this and adjust the salt levels accordingly. Set aside to cool.
  4. Once cool, add the egg and mix to combine. Form into 5 patties on a baking sheet and set the patties in the refrigerator to setup. Approximately 15 minutes.
  5. Using the skillet over medium heat, melt a tablespoon of butter and a tablespoon of olive oil until bubbling and frothy. Cook the patties for approximately 2 minutes per side. Flip and continue cooking. Add cheese at this point.
  6. Add the mayonnaise and Jalapeño Business in a bowl, whisking to combine. Set aside.
  7. Slather some of the Jalapeño Business Mayo on both sides of the toasted English Muffin.
  8. In order, place the roasted red peppers, the bean patty, the greens and top it off with the English Muffin! Enjoy!
